Green tea is the closest in flavor to the natural leaf, and retains that herbal aroma from heating the tea. Pan-firing, baking, or steaming the tea upon plucking destroys the natural enzymes in the tea that would ordinarily cause it to ferment and helps to make the leaves more pliable for further processing such as hand-rolling or twisting. As with Black Teas going through processes more than once to achieve a desired leaf, often a series or combination of heating methods interspersed with hand-rolling is used to achieve a quality Green Tea.
Green Teas are graded by shape and age. The most prized green teas are often a gunpowder variety, in which the leaves have been tightly rolled to resemble BB shot. The tightly rolled leaves release their aromatic essences slowly as they uncurl upon brewing, producing a light, smokey-sweet flavor. Often, Green Teas are infused with floral or citrus essences to complement the leaf varieties.
